Throughout the 1600’s there was a growing interest for food from Europe. This was because of political events, such as the marriage of Charles I to the French princess Henrietta Maria in 1625, the forced exile in France and Holland of many supporters of the royalist cause during the Commonwealth, and Charles II's marriage to the Portuguese princess Catherine of Braganza in 1662. Foreign food was popular and this was reflected in works of literature where food was used to portray a rich lifestyle. In some works of literature the characters were depicted as sophisticated people because of their lifestyle. Their lifestyle included consuming rich European food that was viewed by others as exotic. French food was introduced in England and it was flavored with anchovies, capers and wine, and introducing coulis, roux, ragouts and fricassés.
