INTRODUCTION

Proteins are natural and organic polymers composed of hundreds of amino acid monomers that are all linked together with peptide bonds. There are twenty types of amino acids that can be used to make protein. Amino acids are composed of a central carbon, an amino group, a carboxyl or acid group, a hydrogen, and an R (variable) group. R-CH-(NH2)(COOH) is the general chemical formula that can represent an amino acid. (There is no general chemical formula for protein as there are many variations of protein.) Muscle cells contain protein filaments that slide past one another, producing a contraction that changes the length and shape of the cell. Other proteins, including collagens and elastin, provide support for connective tissues such as tendons and ligaments.

PROTEINS AS ENZYMES

Enzymes are mainly globular proteins that act as highly active catalysts which facilitate and speed up biochemical reactions. Two examples include lactase and pepsin. Lactase breaks down the sugar lactose found in milk. Pepsin is a digestive enzyme that works in the stomach to break down the food we eat.
