people claim to wash their hands well, only 67% have proven to do so. [1] People know it's important, but don't take the time to do it, and to do it right. One study [2] showed that handwashing was more likely to succeed in restaurants when they had more dedicated handwashing sinks, and the sinks were more available. Handwashing was less likely when the restaurants were busy or when gloves are used. That seems like a contradiction. However, gloves can be a source of contamination as well because workers tend to change them less than they should. Most food handling employees do not change their gloves often enough. They should change them in between handling different kinds of foods, or at least every four hours. Hands should be washed often, but should not be washed too often, like more than 35 times a day. Otherwise, the protective barriers in the skin can become damaged and more vulnerable to bacteria and pathogens.
